Since the navigation of a Flashblocks enabled site is editable, does this mean a user can create or delete new pages from within the browser editing interface? Or should new pages always be built in the original Flash environment?
The user can create new pages if you have designed the site with this functionality. There are several examples of this in the demo site that comes with Flashblocks. - Please see the template1, template2, and the gallery module, examples.

Does the editable image have to be on the stage of the flash movie, or can it be embedded in a symbol? ie - we have a movie symbol that is comprised of two images that crossfade into one another. Can the user change those two images from the browser editor?
The Mediablock component (the editable image) can be placed anywhere - external swfs or deep inside movie clips. And yes, use will be able to change both images.

Where is everything stored? Another product I am looking at uses a mySQL database. I have no preference one way or another, just curious.
For simplicity, ease of backing up, and portability, all data is stored in external XML files. For example, as a designer you can move an entire site, from a testing server, to your clients host in minutes - you do not need to configure anything - just upload the files.

If the original swf file is re-authored, do all the images and text have to be re-inserted, or do we need to add just the new stuff?
Yes, you can change an entire site's contents just by replacing the data file or editing the data file. Notice in the demo site how you can select the "German" language and all data is instantly changed; a new data file was loaded over the old and the swf has remains the same.

Your video walk-throughs are very helpful and answered many of my questions. I'll spend some time in the forums, too. Do you have an inclusive guide that I can download-- that outlines basic installation, flash authoring concerns, basic editing?
You can view the ReadMe.htm file, that comes with Flashblocks, here.
